NEW YORK, April 18 — If like us, you’re craving for pasta tonight, you might want to check out this simple, yet delicious pesto asparagus and sun-dried tomato pasta.
In this clip from YouTube channel Tasty, you’ll learn how simple it is to prepare this meal which is perfect if you’ve had a busy day at the office or if you’d just like a hearty meal to kick-back on a week night.
You’ll need these ingredients for this recipe: 5 asparagus spears, 1 tbsp olive oil, 8oz penne pasta, 4 cups of fresh basil leaves, 1/3 cup of pine nuts, 2 cloves of garlic, 1/2 cup of olive oil, 1/2 cup of parmesan cheese, 1/2 cup of sun-dried tomatoes, and salt and pepper to taste.
Before you begin with this recipe, preheat the oven to 425°F/220 °C. You’ll also need to bring four quarts of water to a rolling boil in a large pot.
Remove the woody ends of the asparagus and cut the remaining spears into quarters. Place on a baking sheet and drizzle with olive oil, salt, and pepper. Be sure to toss the asparagus so each piece is evenly coated. Bake for 10 minutes.
Cook the penne in the boiling water for 10-12 minutes, or until al dente. Drain and set aside.
Blend the basil, pine nuts, garlic, and olive oil in a blender or food processor until it becomes a paste. Add in parmesan and salt, and continue to blend.
In a large bowl, combine cooked pasta, sun-dried tomatoes, roasted asparagus, and pesto (about three hefty tablespoons). Toss together and serve hot or cold. Top with extra parmesan cheese if you prefer. Enjoy!- MMO
